The state's signature dish is dal baati churma. Other popular dishes include khichdi, made with rice and lentils, and moong dal halwa, a dessert made from moong lentils, ghee, and sugar.
Delhi is famed for its wide variety of tempting street food offerings, ranging from kebabs to kulfi, Indian ice cream. Being home to such a diverse mix of people, the region's cuisine has evolved based on a range of different influences. Ubiquitous dishes include familiar favourites like biryani and butter chicken, as well as chole bhature - a regional staple consisting of a spicy chickpea curry served with a type of fried bread.
